Ramen Noodle Salad

Back during the pandemic I decided to go on my weight loss journey. I wasn’t looking forward to the dietary restrictions and calorie counting. I am a total pasta addict. If you have similar struggles then I want to share a recipe with you that got me through those tough carb withdrawal days. Enter: Brown Rice Ramen Noodle Salad. Packed with flavor, nutrients, and a hefty dose of convenience, this salad became my secret weapon on my journey to losing 100 pounds (I know, I know, some of you just went 100lbs!? I’ll share that journey at some point if you all want me to.) Also what I love is it is quick to prepare and bursting with vibrant colors and flavors, it's the perfect meal to kickstart your day or enjoy on the go. I’m sure I have you convince to try it by now, so lets dig in!

Ingredients:

- Brown rice ramen noodles

- Fresh tomatoes

- Arugula

- Spinach

- Black pepper

- Garlic powder

- Salt

- Olive oil

- Apple cider vinegar

Instructions:

1. Cook the Ramen Noodles: Begin by cooking the brown rice ramen noodles according to the package instructions. Once cooked, drain and set aside to cool slightly.

2. Prep the Vegetables: While the noodles are cooking, prepare the fresh tomatoes by slicing them into bite-sized pieces. Wash the arugula and spinach thoroughly and pat them dry.

3. Assemble the Salad: In a large mixing bowl, combine the cooked ramen noodles, sliced tomatoes, arugula, and spinach. Season with a pinch of black pepper, garlic powder, and salt, adjusting to taste.

4. Drizzle with Olive Oil and Apple Cider Vinegar: Drizzle a generous amount of olive oil over the salad, followed by a splash of apple cider vinegar. Toss everything together until well combined, ensuring that the noodles and vegetables are evenly coated with the dressing.
