Gouda Kale Mac N’ Cheese

In the realm of comfort food classics, mac n cheese reigns supreme, holding a cherished spot in our hearts. And if you've been following along with my culinary adventures, you know my love for all things pasta runs deep. This particular recipe, however, was sparked by a memorable mac n cheese experience at Jose and Sons restaurant.

Now, fair warning: this ain't your average mac n cheese. We're taking things up a notch, leaving the kiddies at home and catering to the grown folks' table. I can already hear some of you questioning, "Kale in mac n cheese?" Oh, but yes, my Beleafers, we're throwing in that kale – and trust me, it's about to earn its spot on your next family gathering's must-have dishes list.

Alright, enough chitchat – let's dive into the deliciousness that is our Gouda Kale and Roasted Tomato Mac n Cheese recipe!

Ingredients:

- Penne noodles 1 pack ( Or any noodles you prefer, I just had Penne at the time. )

- Fresh kale ( 2 cups, chopped )

- Olive oil ( 2 tbsp )

- Garlic powder ( 1 tsp )

- Sweet bourbon seasoning ( 1 tsp )

- Lemon garlic salt seasoning ( 1 tsp )

- Mexican mix seasoning ( 1 tsp )

- Dried roasted garlic tomatoes ( 1/2 cup )

- Smoked Gouda cheese ( 1 block )

- Black pepper ( to taste )

- Fenugreek ( 1/4 Tsp for added depth of flavor)

- Almond milk ( 1/2 cup )

- Mexican shredded cheese blend ( 1 cup for topping )


Instructions:

1. Cook the Penne Noodles:

Start with a half filled part of water and salt. While we wait for the water to reach a boil to add our penne noodles begin step 2. Once the water is at a boil, add your noodles and cook until they are are al dente. Drain and set aside.

2. Prepare the Kale and Roasted Tomatoes:

While the noodles are cooking, wash and chop the kale. In a pan, heat some olive oil over medium heat and sauté the kale until wilted. Season with garlic powder, sweet bourbon seasoning, lemon garlic salt seasoning, and Mexican mix seasoning. Add the dried roasted garlic tomatoes to the pan and let them cook together until slightly charred. Set aside.

3. Melt the Smoked Gouda Cheese:

In a separate pan, melt the block of smoked Gouda cheese over low heat. Stir in some black pepper, fenugreek, and a splash of almond milk to create a creamy cheese sauce. Once fully melted and smooth, remove from heat.

4. Combine the Ingredients:

Add the sautéed kale and roasted tomatoes over the penne noodles. Stir and mix them throughout the pot so the kale and tomatoes are spread out evenly. Pour the melted smoked Gouda cheese over the mixture and gently toss until everything is evenly coated in cheesy goodness.

5. Garnish and Serve:

To finish, sprinkle some Mexican shredded cheese blend on top for an extra layer of flavor and texture.
