Black Bean Noodles

Hey Beleafers, it's been one of those weeks. My fiancé and I got super busy with work, and when we finally arrived home and opened the fridge, we just stared at our empty shelves and sighed... it looked so sad. So we began to look through the rest of our kitchen, staring into the abyss of our half-empty cabinets. Then, I spotted one lonely can of black beans and a pack of spaghetti. Suddenly, it hit me – black bean noodles! I mean, why not? We've got the noodles, we've got the beans, and heck, we always have a ton of spices on deck.

So I thought, why not give it a try and see where it goes? I was inspired by the Korean dish Jajangmyeon (noodles in black bean sauce). While I didn’t have the right ingredients to make the original version, I cooked up my own recipe that came out delicious and is now officially on the top 10 dinner menu in our home. So, if you ever find yourself in a similar pantry predicament, just remember – with a little creativity and a whole lot of hunger, you can turn even the most bare-bones ingredients into a feast fit for a king (or at least a hungry couple in desperate need of sustenance). Let's dive into this culinary escapade together, shall we?

Ingredients:

  • Spaghetti noodles

  • Organic black beans

  • Soy sauce (low sodium)

  • Worcestershire sauce

  • Olive oil

  • Tomatoes

  • Tofu

  • Paneer

  • Minced garlic

  • Lemongrass paste

  • Seasonings: fenugreek, black pepper, white pepper, salt, clove, garlic powder

Instructions:

  1. Marinate Tofu:

    Start by draining and pressing organic tofu to remove excess water. Cut the tofu into cubes and marinate it in a mixture of soy sauce, Worcestershire sauce, and garlic powder. Allow it to soak up the flavors while you prepare the other ingredients.

  2. Prepare Ingredients:

    While the tofu marinates, cut the paneer into cubes and set it aside. Begin boiling water for the spaghetti noodles, adding a pinch of salt to the water for flavor.

  3. Cook Black Bean Base:

    In a pan, heat olive oil over medium heat. Add the jar of organic black beans, including the brine, to the pan. Stir in minced garlic and allow it to infuse into the beans. As the beans simmer, chop the tomatoes and set them aside.

  4. Add Tofu and Paneer:

    Once the black beans are heated through and infused with garlic, add the marinated tofu to the pan, along with its marinade, for an extra burst of flavor. Stir in the cubed paneer, ensuring all ingredients are well-coated.

  5. Season and Simmer:

    Season the black bean mixture with fenugreek, black pepper, white pepper, salt, clove, garlic powder, and lemongrass paste. Let the flavors meld together as the mixture simmers.

  6. Cook Noodles and Combine:

    By now, your spaghetti noodles should be cooked to perfection. Drain them and add them to the pan with the black bean mixture. Toss everything together, allowing the noodles to soak up the savory sauce.

  7. Serve and Enjoy:

    Once the noodles are coated in the flavorful sauce and top the tomatoes, and it's time to serve up this delicious dish! Garnish with fresh herbs like cilantro or green onion, if desired, and dig in. Bon appétit!
