Ingredients:

For the Pasta & Sauce:

  • Rotini pasta: 12 oz

  • Mushroom tomato sauce: 1 jar (I used an organic Harris Teeter brand mushroom tomato sauce but pick whatever tomato sauce brand you’d like, preferably one with mushroom flavor.)

  • Boursin cheese: 1/2 cup (for a creamy touch)

For the Meat & Veggie Mix:

  • Olive oil: 2 tbsp

  • Paneer: 1/2 cup, chopped into fine cubes

  • Mushrooms: 1 cup, sliced

  • Beyond Beef Cookout Classic Patties: 2 patties, chopped

  • Cherry vine tomatoes: 1 cup, halved

  • Fresh basil: 1/4 cup, chopped

  • Mediterranean vegetable blend: 1 bag (zucchini, yellow squash, carrots, green beans, red peppers, and onions)

  • Balsamic vinegar: 2 tbsp

Seasonings:

  • Garlic salt: 1 tsp

  • Onion powder: 1 tsp

  • Umami mushroom seasoning blend: 1 tsp

  • Veggie pepper seasoning: 1 tsp

  • Chives: 1 tsp

  • Oregano: 1 tsp

  • Black pepper: to taste

  • Garlic parmesan seasoning: 1 tsp

Cheese Topping:

  • Swiss cheese: 1/2 cup, shredded

  • Mozzarella cheese: 1/2 cup, shredded

  • Italian blend cheese: 1/2 cup, shredded

Instructions:

1. Cook the Pasta:
Bring a pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.

2. Sauté the Mushrooms & Paneer:
Heat olive oil in a large pan over medium heat. Add the mushrooms and paneer, stirring occasionally until they start to brown. Season with garlic salt, onion powder, and umami mushroom seasoning blend to enhance the flavor.

3. Infuse with Basil & Tomatoes:
Add the cherry vine tomatoes and fresh basil to the pan. Stir well and allow the basil to infuse its flavor into the olive oil and paneer. Let everything cook for a few minutes until the tomatoes soften.

4. Cook the Mediterranean Veggie & Beyond Beef Mix:
Add the Mediterranean vegetable blend to the pan, followed by the chopped Beyond Beef patties. Season with veggie pepper seasoning, chives, oregano, black pepper, and garlic parmesan seasoning. Let everything cook together, stirring occasionally. As the mixture sizzles, add balsamic vinegar to enhance the richness of the flavors.

5. Prepare the Sauce:
In the pot where you cooked the pasta, add the drained noodles, mushroom tomato sauce, and Boursin cheese. Stir until the sauce becomes creamy and fully coats the pasta.

Transfer the sautéed meat and veggie mixture into the pasta pot and mix well, ensuring all the ingredients are evenly distributed.

7. Add the Cheese & Melt:
